About the Recipe
Gorditas are a popular street food dish and it can be stuffed with may different ingredients,
Ingredients
2 cups tortilla corn flour
1 +3/4 cups of water
1 cup ricotta cheese
1 tbspoon epazote (if available)
1 pound fresh mushrooms
2 cloves garlic (chopped)
1 guajillo chile (seeded and thinly sliced)
2 oz white wine
salt
pepper
2 tbspoons lard
Preparation
For the gorditas:
Make the masa by mixing the water and corn flour, work it with your hands for 2 minutes.
Make a masa ball the size of a lemon and press with your hands or with a tortilla press. it has to be about half of an inch thick.
Spray some oil in a pan or brush some lard in it, cook the gordita for 3 minutes per side. cut in half leaving a pocket and save for later.
Mushrooms:
Slice the mushrooms, cut the stem of the giajillo chile and seed it, roll it and slice very thin. Chop the garlic.
In a hot pan add the olive oil first, then the chile for 30 seconds, then add the garlic and musrooms, season with salt and pepper and add the white wine, cook for 4 more minutes and save.
Requesón:
Season the requesón wirh salt and pepper, add fresh epazote or cilantro.
Stuff Gorditas with 2 tbpoons of requesón and 2 tbspoons of mushrooms.
